This is the time of year I find myself scouring Pinterest and my cookbooks for dishes to take to those summer neighborhood get-togethers. Especially the last day of school events, Memorial Day, and July 4th. It’s also a family staple for game day in the fall. It’s a rare occasion that you won’t find a dish of taco dip on the coffee table during the game!
I love this recipe because it can be completely customized and I can use what I have on hand. Best of all, it can be loaded with veggies and is a snap to put together!
A Quick Base
The base of the dip is just 3 easy ingredients: sour cream, cream cheese, and taco seasoning. A packet of taco seasoning works great, but I like to keep a jar of homemade seasoning in the pantry.
I used regular versions today, but light sour cream and cream cheese work just as well. I often substitute some or all of the sour cream with Greek yogurt.
Blend ingredients together In a medium bowl. Spread mixture onto bottom of baking dish or 2 pie plates and sprinkle with grated cheese. I love to add beans too, which I usually have in the freezer – one of my favorite recipe shortcuts!
Then Load Up the Toppings
Gather the rest of your toppings and layer it up onto the dip. This is my favorite part – especially in the summer months when the produce is just perfect. There is no wrong way to do this – we often do some ingredients just on half of the dip, depending on what everyone wants.
You can also serve some ingredients on the side for individual tastes (this is where jalapenos often end up since not everyone likes the spiciness).
I love quick and easy recipes that I know will be a hit at parties – I’d love to hear your favorites in the comments!
